Follow These Steps

BEFORE YOU START: Rehydrate soy curls in warm water for 10 minutes. Dice all vegetables. This soup comes together quickly once you start!
  1. 🥩 Step 1: Prepare soy curls (5 minutes)
    Add soy curls to a medium bowl with warm water. Let sit 10 minutes until soft.
    Drain and squeeze out excess water. Heat 1 tablespoon oil in your soup pot over medium-high heat.
    Brown the soy curls for 3-4 minutes until golden. Remove and set aside.
  2. 🧅 Step 2: Build the flavor base (5 minutes)
    In the same pot, add 2 tablespoons olive oil over medium heat.
    Add diced onion, carrots, and celery (the mirepoix). Cook until softened, about 5 minutes.
    Add minced garlic and cook for another minute until fragrant.
  3. 🍲 Step 3: Add broth and herbs (2 minutes)
    Pour in the entire 32 oz carton of vegan chicken broth (about 4 cups).
    Add dried thyme, bay leaves, and the fresh rosemary sprig.
    Bring to a boil over medium-high heat.

    Once boiling, add the orzo pasta and reduce heat to medium-low.
    Simmer for 8-10 minutes until orzo is tender, stirring occasionally.
    Don't overcook - orzo should be just tender!
  5. 🥩 Step 5: Add soy curls back (1 minute)
    Return the browned soy curls to the pot.
    Remove the bay leaves and rosemary stem (leaves will have fallen off and are tender to eat).
    Stir to combine.
  6. 🥬 Step 6: Wilt the spinach (1 minute)
    Add the baby spinach and stir until wilted, about 30-60 seconds.
    It looks like a lot but will shrink down quickly!
  7. 🍋 Step 7: Season and finish (2 minutes)
    Remove from heat first (important for lemon!).
    Taste and season with sea salt and fresh cracked black pepper.
    Add fresh lemon juice to taste - start with 2 tablespoons and add more as needed.
  8. 🍽️ Step 8: Serve immediately
    Ladle into bowls and garnish generously with chopped fresh parsley.
